My son found this quick ice cream recipe treat that took little or no time to make. The recipe started with a carton of ice cream softened, vanilla wafers crushed with butter which was layered on the bottom of the pan first. We put the softened ice cream on top of the vanilla wafers and then put nuts on top of the ice cream. We alternated this method two times and at the end we topped it off with nuts, sprinkles and chocolate. Of course it is up to your imagination what will taste good as you top your treat off. The longest part was the wait for the ice cream to harden back up in the freezer so that we could enjoy eating what we created. I have to admit, I had doubts at first but I think I actually love this recipe. I must say very tasty and a great kid treat. I thought I would share since it really was a nice quick tasty treat.

So for 2016 I am trying to cook recipes that I have not tried before. I have lots of cookbooks including recipes that I have collected over the years but have never actually found the time to try my recipe collection out. Here is my first test recipe and I think it was a good choice.
My family including myself did in fact enjoy it and it was what I would consider a very simple recipe that did not require a lot of time. I added mushrooms to this recipe which I thought was a great addition.
Here is a picture of the finished meal… Shrimp Fettuccine with Spinach and Parmesan and below the picture is the recipe just in case anyone is interested in trying it.
8 ounces uncooked fettuccine
2 tablespoon butter
1 tablespoon extra-virgin olive oil
2 garlic cloves, thinly sliced
10 ounces medium shrimp, peeled and deveined
3/8 teaspoon salt
¼ teaspoon freshly ground black pepper
6 ounces fresh baby spinach
1 ¼ ounces Parmesan cheese, shaved
- Cook pasta according to package directions, omitting salt and fat.
- Melt butter and oil in a large skillet over medium heat. Add garlic to pan; cook 1 minute. Remove garlic from pan with a slotted spoon; place in a small bowl. Increase heat to medium-high. Add shrimp, salt, and pepper to pan; cook 4 minutes or until shrimp are done, stirring occasionally. Add pasta, spinach, and garlic to pan; cook 1 minute or until spinach wilts, tossing to coat. Sprinkle with cheese.

Happy New Year’s GUTS followers! It has been a while since I checked in but I wanted to get back on track and start 2016 off with new resolutions and goals. You may have guessed that working on the GUTS blog is one of my New Year’s resolutions.
I hope that 2016 brings lots of excitement and achievements in the months to come. Keep working on your goals and remember to never give up. If you fall off track, don’t worry about what others will think if you decide to get back on track.

Here’s a fabulous wine tip for the holidays: If you don’t have time to cool your white or red wines before serving, add 2-3 frozen grapes in your glass—white grapes for white wine and red grapes for red wine. It will cool your wine and you will have a treat at the bottom of the glass.
Hobby Lobby offers a 40% off coupon weekly on their website at http://www.hobbylobby.com. This is perfect for those of us that don’t get the newspaper on a weekly basis. They also offer an iphone app just in case you walk out the door without grabbing those coupons off the printer. Of course there are some restrictions to their coupon usage but not enough to deter me from using them. You can also sign up to have their weekly specials and ads sent directly to your email box so you know at all times what is on sale.
If you are like me, you only use baking soda when you are going to cook something that calls for this ingredient. Well in order for me to keep from choking anybody, I always test my baking soda for freshness by pouring 1/2 teaspoon vinegar or lemon juice over the baking soda. If it does not fizz, then you know it is too old to be effective. Throw it down the drain and purchase some more.

Here are some nice cake baking tips that will come in hand:
- When a cake recipe calls for flouring the baking pan, use a bit of the dry cake mix instead. This will prevent no flour mess on the outside of the cake.
- For best results in cake baking, let your eggs, butter, and milk reach room temperature before mixing.
I alway try to do these quick little tips when I am baking. The exception is when I am in a rush which then I guess you can say that I was unprepared and did not plan my time accordingly.
