MEXICAN PORK CHOPS

 

I found this recipe in a local magazine.  It’s so easy and delicious.

Ingredients:

6 loin pork chops

2 tablespoons cooking oil

salt and pepper to taste

3/4 cup uncooked long grain rice

1-1/2 cups water

1 can 8 ounce tomato sauce

2 tablespoons taco seasoning mix

1 green pepper, chopped

1/2 cup shredded cheddar cheese

 

In a large skillet, brown pork chops in oil and sprinkle with salt and pepper.  Meanwhile, in a greased 13×9 baking dish, combine rice, water, tomato sauce and taco seasoning anx mix well.  Arrange porck chops over rice and top with green pepper.  Cover and bake at 350 degrees for 1-1/2 hours.  Uncover and sprinkle with cheese and return to the oven until cheese is melted.
