Fabulous Zucchini Pizza

Day 3 in my 40 in T minus 30 challenge.

I am happy to report that I have done pretty well over the weekend with my exercising, water and food choices.  Today, I made myself lunch using a recipe inspired from something I saw on Pinterest.

These zucchini pizzas were surprisingly tasty.  It tasted like eating a real pizza but without the calories from the bread.  Big bonus here: it is super easy to make!!

I have seen this done with strips of zucchini as opposed to the rounds that I used.  I just happened to have been given a mutant sized zucchini from somebody’s garden and I am trying to figure out how I am going to eat it all.  I put a dent in it today.

To make, you put the zucchini slices on a baking sheet and spray them with olive oil.  Then, you top your slices with pizza sauce, mozzarella cheese, pepperoni rounds and a little bit of parmesan cheese to top it off.  Bake at 400F for about 15-20 minutes and voila!!  Delicious pizza snack!

    Im going to try this with a vegan option. You know, the vegan cheese and pepperoni to even make it more healthy. Thanks, it looks de-lish.
