40 in T Minus 30 Challenge-Week 3-3/4

OK.  I missed posting my update on Monday and we are already most of the way through this week, so we will call this week 3 and 3/4.  Part of the reason I didn’t post is because I have been a little bit under the weather since Monday and all I really wanted to do was sit around or lay around.  That is also part of the other reason that I didn’t want to post any updates because I haven’t really gotten a whole lot of exercise while sitting and laying around.  I have managed to lose another 1/2 pound just by sort of watching what I eat but the whole exercise regime sort of went by the wayside last week.

No matter!  I still have 10 days until my birthday and I can still make one last sprint toward the finish line and end up feeling pretty good by then…. I think.

I had the most awesome little dinner tonight!  I sort of copied something my mom and I had gotten and a Peruvian restaurant in town on Sunday.  Have you ever heard of stuffed avocado?  Can you say YUM?!?!  The one we got at the restaurant was stuffed with “veggies” and shrimp.  I say “veggies” because as far as I can tell, I think it was just onions.  At any rate, it was good.  I tricked mine up a little bit because I didn’t have any shrimp on hand.  I used chicken instead.  You basically just remove the pit from the avocado and fill it with shredded chicken, sweet onion, celery, garlic powder and a little bit of mayonnaise.  I guess it doesn’t sound like much, but it was actually delicious and since I didn’t use a whole lot of mayo, probably a wee bit healthier.   But the best part??  It involved absolutely NO cooking whatsoever!

Fingers crossed and hoping that I can actually breathe out of my nose this week and get back into the gym!

Anybody got any healthy recipes for me to try this week?  I’d love to hear your suggestions.

Onward to 40!
